It all started when...

It all started when our church planted some crabapple trees. They are spectacular in the Spring, full of magnificent blooms, and chock-full of colourful fruit in the Fall. The only problem? No one was picking them and as a result, the crabapples fell to the ground, were trampled on and dragged into the building. The Church Officer, who is a friend, was lamenting to my husband about the mess that he had to clean up at the end of each day, sometimes several times during the day, so my dear husband had an idea, “Don’t worry about it Peter, Bobbie and I will come by and pick the crabapples”. “What are we going to do with all those crabapples?” was my response, to which he replied “We’ll make jelly! How hard can it be?”

I found a recipe and we made five batches of jelly. It was a long process that took several days, but it was actually easy. Our end product was a beautifully clear, dark rose-coloured jelly. It wasn’t too sweet or too tart. It was delicious on toast, with cream cheese or peanut butter. It made for a pretty hors d’oeuvre on crackers with some Brie cheese. I tried it with pork chops on my supper plate. Crabapple jelly, I discovered, was quite versatile as a condiment!

However, I now had about 40 jars of jelly. I donated two dozen of them back to the church for our annual Fall Fair and as Christmas was soon upon us, I gave them as gifts to appreciative friends, family and colleagues.

I collected the crabapples again the following year and then the next. It became normal for our church friends to update me on the state of the trees, “It’s going to be a bumper crop this year!” “You’ll have LOTS of crabapples THIS Fall!”. “Can we count on your donation to the Jams and Jellies Table for the Fair?”

I came to so enjoy the magic of this simple transformation that I looked to repeat it with other fruit, trying out different jellies, experimenting with jams. I was hooked. What if I combined different fruit? added spirits? Soon I was venturing into the savoury world of chutneys. This proved so much more rewarding than I could have anticipated. Then came the world of mustard. And just recently, I discovered edible flowers! Oh, my!

It often feels that this passion I have discovered for making preserves feeds my soul as much as it feeds my body and my imagination.
