Every spring, I look forward to the brief season when the lilacs are in bloom. Their fragrance fills the air for only a short time, and transforming those blossoms into jelly feels like capturing a little of spring itself. It remains one of my favourite preserves—not only because of its delicate floral flavour, but because it reminds me that the most beautiful things are often the most fleeting.

Lilac Jelly
