I’ve been busy waiting these days.
Waiting and thinking. Waiting, planning and dreaming. Mostly, waiting and dreaming.
Dreaming of Spring – after the cold and frost have gone.
Dreaming of after Covid – when the warmth of renewed friendships can be cherished.
In the meantime, I keep myself busy. During the week I’m busy at school, planning, scheduling and visiting classes. I so enjoy that last part the most.
During the weekend, I’m busy preserving. This weekend I brought out the spirits. Red wine to make a deep rich Red Wine jelly. Pear cider, for a crystal clear fragrant Pear Cider jelly. Limoncello, to pair with frozen wild blueberries for a luscious Blueberry Limoncello jam. Intrigued? Give them a try.
How are you spending these cold days? Let me know in the comment section below.
I wish you well, friend.
